Easy Vegetable Beef Soup

  • 1 pound ground beef
  • 2 quarts water
  • 4 potatoes, peeled and cubed
  • 1 (16 ounce) package frozen mixed vegetables
  • 1 (14.5 ounce) can diced tomatoes
  • 1 onion, chopped
  • 8 cubes beef bouillon, crumbled
  • ½ teaspoon ground black pepper

Directions

  1. Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain.
  2. Transfer beef into a large pot over medium heat; add water, potatoes, mixed vegetables, tomatoes, onion, bouillon, and pepper. Bring to a boil, then reduce heat and simmer for 45 minutes.
